FRIED JERSEY TOMATOES

FUN MOM FACTS… She took me to see Elvis in Vegas when I was 3 years old. Not bad for a first concert!

 

FRIED JERSEY TOMATOES

Fried Jersey Tomatoes

 

- 2 good Jersey tomatoes (firm)

- 2 tbsp flour

- pinch of sugar (1/2 tsp)

- butter to grease pan (1 tbsp)

- 2 pieces of bread (your preferred type for toast)

 

-Slice tomatoes into quarter inch slices. Reserve any excess tomato pulp or juices for later.

-Mix together flour and sugar. Reserve excess mixture for later.

-Coat tomato in flour mixture.

-Heat buttered pan on medium to low heat and add tomatoes.

-Cook for 7-10 minutes on each side, flipping at least once. Cool until slightly browned and remove from heat.

-Toast two pieces of bread and top with tomatoes and cheese sauce. 

Makes 2 servings.

 

Fried Tomatoes Cheese Sauce

- excess tomato pulp

- excess flour mixture

- 1 tbsp Velveeta cheese (or American cheese)

- 1/4 cup cold water

 

Mix ingredients together first and then cook on stove in a saucepan until everything melts together.
